The most memorable meals don’t begin in the kitchen — they begin with the ingredients. Real Mediterranean cooking cannot come out of a jar or a dusty spice rack. It depends on produce and herbs that are bright, aromatic and genuinely fresh, which is why sourcing is the first decision we make about any menu.
THE HERB-FORWARD KITCHEN

In the Levantine tradition herbs are never a garnish — they are the foundation of the dish. We build our marinades, salsas and mezze spreads around a genuinely generous quantity of fresh greenery, bought in for each event rather than kept on a shelf.
The aromatics. Rosemary, oregano and thyme carry the deep, resinous notes that stand up to roasting. They go onto vegetables and meat before they ever see the oven.
The bright finishers. Parsley, cilantro, mint, basil and chives go on at the end, by the handful, while they are still crisp. This is what keeps a rich, oily, nutty plate from feeling heavy.
A FLORIDA-MEDITERRANEAN FUSION

Our cooking is rooted in the Mediterranean, but we cater in Central Florida — and the subtropical growing season here opens up ingredients the Levant never had.
Florida mango and avocado sit naturally alongside Levantine flavors: mango’s sharp tropical sweetness against sumac and chili, avocado’s richness beside herbs and citrus. We’re glad to work them into a herb salsa or a summer salad for events during the local season — mango runs roughly June through September — so ask us when you’re planning a warm-weather menu.
HOW WE SOURCE
We buy fresh from local suppliers close to each event rather than holding stock, and we plan menus around what is genuinely good that week. Herbs and produce are prepped the same day wherever the dish allows it. It is not a complicated philosophy — it is simply the difference between food that tastes alive and food that tastes like it has been waiting.
