Sage Catering brings the flavors of the Mediterranean and Middle East to events across Orlando and Central Florida. Warm pita and fresh-baked breads, hummus and tahini, smoky roasted eggplant, herb-heavy salads, spiced rice, and slow-cooked meats — food built for sharing, and for tables where people linger.
MEZZE & GRAZING TABLES
Mezze is how this food is meant to be eaten — many small dishes, set out together, shared across the table. It is also one of the most requested styles of event catering right now, and it suits our kitchen naturally.
A Sage mezze spread can include hummus, tahini, matbucha, baba ganoush and other dips; Israeli salad, tabbouleh-style grain salads and marinated vegetables; olives, pickles and fresh herbs; and warm pita, laffa or fresh-baked breads to bring it all together.
WHAT WE COOK
From the grill and the oven: spiced roasted chicken, slow-braised beef and brisket, Moroccan-style fish, grilled salmon, and schnitzel done properly.
Grains, rice and sides: couscous, herbed and spiced rice pilafs, rice with almonds and raisins, roasted potatoes, roasted seasonal vegetables, and green beans with toasted nuts.
Salads and small plates: Israeli salad, cucumber salad, roasted eggplant, grain salads, and seasonal vegetable dishes.
From the bakery: challah and fresh breads, rugelach, babka, pastries and cakes — all baked in house.
NATURALLY PLANT-FORWARD
So much of this cuisine is built on vegetables, legumes, grains, olive oil and herbs, which makes it easy to serve guests with different needs without building a separate menu. Charred Eggplant Carpaccio
Eggplant roasted until it collapses, then laid out thin over a pool of silan-tahini and finished with a bright herb salsa, sumac and toasted nuts. Smoky, sweet and sharp in the same bite. Naturally vegan and gluten-free.
Levantine Mezze Board
Hummus, baba ganoush, labneh, marinated olives, pickled vegetables and warm pita, arranged to be pulled apart by hand. The dish that sets the tone for the whole table — guests start talking to each other over it before the mains arrive.
Citrus & Za’atar Chicken Skewers
Chicken marinated in citrus, olive oil and za’atar, then grilled over high heat so the outside chars while the inside stays moist. Served with lemon and herb-flecked tahini.
Crispy Herb Falafel on Green Tahini
Falafel packed with parsley, cilantro and mint so the interior stays green, fried to order for a shell that cracks. Set on a pool of green tahini rather than buried in a pita, so the texture holds.
Deconstructed Mediterranean Market Salad
Tomatoes, cucumber, radish, herbs and olives kept in distinct sections rather than tossed, dressed at the table with olive oil, lemon and sumac. Every element stays crisp, and guests build the ratio they want.
